Orange & Rose Maple Amaranth Bars

These delightful Orange & Rose Maple Amaranth Bars are infused with an uplifting blend of fruits & herbs, to awaken your senses and nourish your soul!


  • 1 + 1/2 Cups Puffed Amaranth*
  • 1 + 1/2 Cups Shredded Coconut
  • 1/4 Cup Sesame Seeds
  • 1 to 2 Tablespoons Rose Petals Dried
  • 1 Tablespoon Orange Zest Fresh
  • 1/2 Cup Tahini
  • 1/4 Cup Honey
  • 2 Tablespoons Coconut Oil
  • 1 Tablespoon Maple Syrup
  • 1 Tablespoon Vanilla Extract
  • 1 Tablespoon Orange Blossom Water*


  1. To create, begin by using a pan to puff the amaranth and then set aside. Then add the puffed amaranth, shredded coconut, sesame seeds, rose petals, and orange zest into a mixing bowl. Stir until combined, then set aside.

  2. Take a pan and set on the stove at low to medium heat. Then add the tahini, honey, and coconut oil to the pan. Stir until melted.

  3. Then combined the ingredients in the pan with the ingredients in the mixing bowl and stir until combined. Once combined, add the remaining ingredients to the mixing bowl and once again stir until combined. 

  4. Line a square pan with parchment paper and press bar mixture into the pan. Press firm & evenly into the pan. Then place in the fridge for 30 minutes to an hour until solid.

  5. Once solid, slice into desired pieces and store in an airtight container for up to two weeks in the fridge.

Recipe Notes

*How to prepare Puffed Amaranth | Take a pan and set on the stove at medium heat. Then add 1 Tablespoon of Amaranth at a time to the pan. Place a glass lid over the pan and heat until popped (about a min), being sure to shake the pan so that the amaranth doesn't burn while popping.

*Food-Grade Orange Blossom Water | May be purchased at a local health food store
